The main difference between sweet and English potatoes (besides flavor, of course), is in the glycemic index. This value represents the speed with which carbohydrates enter our bloodstream: the higher, the more insulin the pancreas releases to try to balance blood sugar levels.

"English potatoes have a high glycemic index (GA = 70), that is, it rapidly raises blood sugar.
